The kohlrabi has a very particular shape: its bulbous base grows out of the ground, thin stems are attached to it spirally and end with large edible leaves. Very pale green, white or purple, it is covered with a thin edible skin. Its flesh is sweet and crunchy with peppery notes and a subtle flavor of radish or broccoli stalk, while the stems and leaves recall the taste of kale, cabbage or cauliflower leaves.
