Kombu seaweed (just like its cousin, Kombu Royal), has an iodized taste like most seaweed, but is distinguished by a slightly sweet side. Its high iodine content makes it an algae of major importance for the maintenance of good health. Kombu (Laminaria digitata) contains sodium glutamate, flavor enhancer par excellence. It can be used to speed up the cooking time of cereals, vegetables and legumes, in addition to facilitating their digestibility. In Japanese cuisine, Kombu is the basic ingredient of dashi, their traditional broth. Like Kombu Royal, Kombu adds creaminess to recipes (it can replace cornstarch and other gelling agents).
