Contrary to what one might think, this sugar is not extracted from the coconut, but rather from the flowers of the coconut tree!

The sap produced by these flowers is thus simply brought to a boil until the liquid has evaporated. The caramelized crystals become coconut sugar!

With slightly coarser grains than white sugar, coconut sugar has a taste reminiscent of brown sugar, but with more flavor, including hints of caramel.
It doesn't taste like coconut!

Its glycemic index is lower than other sugars. The latter would have been established at 35, compared to 60 for white sugar.

It is also more acceptable than other sugars for people with diabetes.

In general, you can replace white sugar or brown sugar with the same amount of coconut sugar.
